Cooking has always been where it starts.

Long before I spoke on stages or advised organisations, I was simply a chef. Learning the craft. Chasing flavour. Respecting ingredients. Discovering the quiet magic of sharing a meal.

Decades later, that passion hasn't changed.

I still believe the best food is delicious, beautifully simple, seasonal ingredients, cooked with care and shared generously.

But I've also learnt that every plate tells a story. It reflects the farmers who grew the ingredients, the choices we make when we shop, the way we value food and the impact those decisions have on our health, our communities and the planet.

That's why I cook the way I do. My food is rooted in flavour first. Seasonal. Generous. Vegetable-led. Always delicious. Sustainability isn't something added at the end — it's woven into every decision, from ingredient selection and menu design to reducing waste and celebrating overlooked foods.

Because when something tastes incredible, people don't just eat it. They cook it again. They share it. They tell their friends. And that's how real change begins.
