I DIDN'T GROW UP WANTING TO CHANGE FOOD SYSTEMS.
I just wanted to cook.
Growing up in Oxfordshire, food was woven into family life. My grandparents farmed, worked as butchers and ran village pubs, so I learnt early that good food starts long before it reaches the plate. It begins with the people who grow it, the seasons that shape it and the stories behind every ingredient.
At thirteen, I stepped into my first professional kitchen. That single decision took me across Europe, through some incredible kitchens and into a career spanning more than three decades. I learnt the craft, led teams, built businesses and fell completely in love with hospitality.
But I also saw another side of the industry. Perfectly good food thrown away. Incredible ingredients undervalued. Farmers squeezed. Menus designed for convenience instead of flavour. Systems that made it easier to waste than to care.
The more I saw, the more one question stayed with me:
‘what if food could work better for everyone?’
That question has shaped everything I've done since.
Today, I'm a chef, author, speaker and consultant helping people reconnect with food in a way that's practical, joyful and full of possibility.
If you've found me online, there's a good chance it's because of beans. What started as a love of one humble ingredient has become something much bigger. Beans are delicious, affordable, nutritious and one of the simplest ways we can eat in a way that's better for ourselves and the planet. They're proof that meaningful change doesn't have to be complicated.
But this has never really been about beans. It's about helping people make better decisions about food.
Because every meal has the power to nourish our health, strengthen communities, support farmers and restore nature.
It begins around the kitchen table.
So whether I'm cooking on stage, writing my next recipe, advising an organisation or speaking to thousands of people, my mission stays the same: to make better food the easiest and most exciting choice we can make.
